Spicy Thai Coconut Curry with Agrocan Coconut Milk

This fragrant and flavorful curry is a perfect weeknight meal that is both hearty and satisfying. The creamy coconut milk base is infused with warming spices like ginger, turmeric, and chilies, while the vegetables add a satisfying crunch.

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red chili pepper, thinly sliced (optional)
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon curry paste (yellow or red)
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cup broccoli florets
  • 1/2 cup chopped fresh cilantro
  • Cooked rice, for serving

Instructions:

Heat the oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened about 5 minutes.

Stir in the garlic, ginger, and chili pepper (if using) and cook for an additional minute, until fragrant.

Add the bell peppers, coconut milk, vegetable broth, curry paste, soy sauce, and brown sugar. Bring to a simmer and cook for 5 minutes.

Stir in the chickpeas and broccoli florets and cook for an additional 5-7 minutes, or until the vegetables are tender-crisp.

Remove from the heat and stir in the cilantro.

Serve over cooked rice and enjoy!

  • For a richer flavor, use full-fat coconut milk.
  • If you don’t have curry paste, you can substitute with 1 teaspoon each of ground coriander, cumin, and turmeric.
